Our story begins in the Vipava Valley, where we process milk from Alpine pastures. With the help of a cheesemaking master from Italy and the latest technology, we bring the quality of Ekolat products to tables across Europe.


From raw material to product
Our approach begins with a deep understanding of the region. We are based in the heart of the Vipava Valley, Slovenia, an area known for its rich history, intriguing geography, and long-standing cheesemaking tradition. The river, after which the valley is named, originates below the slopes of Nanos, renowned for its pastures and traditional cheese of protected geographical origin, which has been made here since the 16th century.
Alpine milk
In this pristine environment lies the essence of our operations. The milk we use is sourced daily from farmers who graze their livestock on Alpine pastures. They are united in cooperatives that guarantee the quality of the raw material. The milk is processed in our automated and technologically advanced cheese factory, allowing us to combine artisanal experience with advanced processes that ensure the safety, quality, and authenticity of our products.
Pasta filata-style mozzarella
We specialize in the production of pasta-filata style mozzarella, meaning mozzarella made from stretched curd. Our team, led by an Italian cheesemaking master, combines experience, tradition, and innovation to achieve excellence in cheesemaking. As a result, we have established ourselves as a reference point not only for taste but also for the safety and sustainability of our products. We are a trusted supplier to major retailers, catering services, and the food industry, and we are consistently committed to ensuring the freshness and delightful taste of our dairy products from the shelves of the leading brands to the tables of end consumers.

Being one of the six facilities of the Group gives us a solid industrial base and a network of unmatched expertise.
The production heart of the Sabelli Group, where the excellence of our dairy products is born. Here, mozzarella, burrata, stracciatella and other cheeses are made through a process that handles 80,450 tonnes of fresh milk annually and employs 370 staff members across 16 production lines.
Specialised in the production of mozzarella, offering a complete range of products in every format, size and packaging. Our Frozen line is shipped from here, mainly destined for the Far East.
