Respectful approach to raw materials
Authentic milk from mountain pastures is collected immediately after milking every day, carefully inspected, and properly processed. We enrich our experience with tools and processes that enable us to produce a reliable and safe product.
Farmers, united in cooperatives, graze their livestock on Alpine pastures and deliver milk daily that is distinguished by is excellent taste and authenticity.
The production and collection of milk, in collaboration with Ekolat, is managed by a consortium of farmers who also ensure the delivery of the milk to the cheese factory.
Milk is processed using exceptionally advanced technology in an automated cheese factory, specifically in production lines dedicated to mozzarella preparation, relying on specialized know-how and efficiency.
Selected ingredients, which means exclusively fresh milk collected within 24 hours, rock salt, and rennet, are carefully processed and subjected to strict controls at every stage of production, ensuring high-quality standards, food safety, and mozzarella with a unique taste.
